1 cup almond milk
1 Tablespoon grade B maple syrup
sprinkles of cinnamon, nutmeg and clove, to taste

Mix all ingredients in a saucepan and cook over medium heat until warm. Serve.

Gluten-Free Coffee Cake

Gluten-Free Coffee Cake

¼ cup coconut oil
¼ cup honey
1 egg
1 teaspoon vanilla
½ cup milk (coconut or other)
1½ cups almond flour
1 teaspoon cinnamon
2 teaspoons baking powder
½ teaspoon sea salt

½ to ¾ cup almond flour
1½ Tablespoons coconut oil
1 Tablespoon honey
2 teaspoons cinnamon

Preheat oven to 350 degrees. Stir coconut oil, egg, vanilla and honey together in a bowl. In another bowl, combine almond flour, cinnamon, baking powder and sea salt. Add dry ingredients to wet ingredients, along with milk, and stir until smooth. Pour into an 8×8 baking pan. In a small bowl, mix the almond flour, coconut oil, honey, and cinnamon for the topping. Spread the topping over the cake. Bake for 20 to 25 minutes,

Baked Quinoa with Apples

Baked Quinoa with Apples

½ cup quinoa
1 cup water
2 eggs
5 Tablespoons unsweetened applesauce
pinch of salt
¼ teaspoon cinnamon
2 teaspoons chopped pecans
¾ cup apple, chopped
1 teaspoon honey

Boil water; then add quinoa, eggs, applesauce, salt and cinnamon to simmer for 10 to 15 minutes. Pour into oven-safe bowl and broil in oven for 7 minutes. Top with pecans, apple and honey. Serve.
