Chicken breast and spinash in a pot

Rosemary Chicken and Spinach
Serves 2

Ingredients:
1 Tablespoon of extra virgin olive oil
2 teaspoons dried rosemary
2 organic chicken breasts, filleted or pounded thin
6 cups fresh spinach
1 cup chicken stock or broth

Directions:
Heat oil in 12-inch skillet over high heat. Tilt skillet to spread oil over entire bottom of pan. Sprinkle rosemary over entire bottom of pan. Lay filleted chicken breasts in alternating directions on bottom of skillet. Lower heat to medium-high. Sear quickly for 1 to 2 minutes; turn chicken over and sear 1 to 2 minutes. Add chicken stock. Heat to boiling. Lower heat to medium. Add spinach; cover. Simmer over low heat for 5 to 8 minutes. Serve.

Pizza with vegetables

Vegan Pizza
Makes 2 12-inch pizzas

Crust Ingredients:
1½ cups unbleached flour (you may use gluten-free or other healthy flour, if you wish)
3/8 cup whole wheat flour (you may use gluten-free or other healthy flour, if you wish)
¼ teaspoon active dry yeast
pinch of salt
2/3 cups hot water

Sauce Ingredients:
1 13.6-ounce can crushed tomatoes
5 cloves fresh garlic, pressed
2 Tablespoons extra virgin olive oil
1 Tablespoon dry oregano
salt
pepper

Topping:
3 cups vegan mozzarella cheese, shredded, if desired. Suggested other toppings include onions, peppers and mushrooms.

Prepare Crust
Note: You can prepare both pizzas at the same time, or refrigerate crust and sauce for up to 3 days. Combine flour, whole wheat flour (or other flour), yeast and salt. Add hot water. Mix until a ball is formed. Ball will be somewhat sticky. Knead dough ball for 2 to 3 minutes. Divide dough into two balls. Set aside in a bowl and cover with a towel for 20 to 30 minutes.

Prepare Sauce
Add olive oil to small saucepan. Heat over medium-high heat. Add garlic and sauté for 2 to 3 minutes. Pour in crushed tomatoes. Add oregano, salt and pepper. Heat to boiling. Lower heat and simmer on low for 15 minutes.

Assemble Pizza
Preheat oven to 500 degrees. Remove dough from bowl. Place on pizza stone or metal sheet. Roll dough out to a 12-inch circle. Add half the sauce and spread evenly around crust, leaving a 1/2-inch edge. Arrange 1½ cups vegan cheese (if using) evenly on top of sauce. Add any additional toppings. Place pizza in oven on center rack. Bake for 10 to 15 minutes.

Quick and Easy Chocolate Mousse
Makes 4 servings

Ingredients:
4 Tablespoons Garden of Life Extra Virgin Coconut Oil
4 Tablespoons cocoa
4 Tablespoons organic honey

Optional mix-ins:
2 Tablespoons almond milk (to give a more liquid consistency)
2 Tablespoons peanut butter
2 Tablespoons chopped almonds
2 Tablespoons dried cranberries
2 Tablespoons cocoa nibs
5 drops peppermint, orange or almond extract

Directions:
This can be prepared in a small blender or can be mixed in a bowl. If mixing by hand, make sure coconut oil is stirred to the point that it is liquid. Combine all ingredients. Pour into 4 small ramekins. Refrigerate for 15 minutes.
