Shamrock Shake

Blueberry Fruit Salad

Serves 2 to 4

Ingredients:

2 cups organic blueberries
2 cups cubed organic jicama
2 cups cubed organic watermelon
1 cup chopped organic peaches
¼ cup chopped fresh mint
juice of 1 lime
1 teaspoon lime zest 

Directions:

Place all chopped fruit into a large bowl and toss in lime, zest and mint (add a pinch of salt-optional). Serve as a side, dessert or breakfast.

Jicama Party Salad

Chocolate Cherry Kiss

Serves 1 to 2

Ingredients:

2 cups unsweetened almond milk
1 scoop Garden of Life RAW Meal Chocolate
1 scoop Garden of Life Perfect Food® RAW Chocolate
1 cup frozen organic cherries
1 ripe organic banana (or 1 cup frozen banana chunks)

Directions:

Place all ingredients into a blender and blend until smooth!

Tomato and Pesto Stuffed Chicken

Lentil Burgers

Makes 6 burgers

Ingredients:

2 cups cooked organic lentils
1 cup cooked organic sweet potato
1 cup organic yellow squash
¼ cup chopped yellow onion
2 organic garlic cloves
2 teaspoons cumin
½ teaspoon salt
½ teaspoon ground fennel
¼ teaspoon black pepper
1 “vegan” egg (To make a vegan “egg”, use 1 Tablespoon Garden of Life RAW Organics™ Super Omega 3 Organic Chia Seeds soaked in 4 Tablespoons water for 30 minutes.)

Directions:

Sauté squash, onion and garlic using two Tablespoons of Garden of Life™ Extra Virgin Coconut Oil or olive oil. When cooled, place in food processor with sweet potato, spices and "vegan" egg. Mix well. Add lentils and pulse until well mixed. Form burgers and place on parchment lined cookie sheet. Bake at 350 for 30 minutes, flip and bake another 20 to 25 minutes.
