Issue 92: Glorious Good-Carb Recipes

Roasted Veggie Soup
Serves 4

4 stalks of coarsely chopped celery
4 large carrots, coarsely chopped
2 medium onions, coarsely chopped
2 Tablespoons extra virgin olive oil
8 garlic cloves, chopped
5 cups filtered water
½ cup porcini mushroom pieces
1 teaspoon turmeric
sea salt and red pepper to taste

Preheat oven to 500 degrees. Coat the carrots, celery and onions with the olive oil and then place on a small non-stick pan and bake for 10 minutes. Remove pan from the oven and add garlic; mix well and bake for another 10 minutes.  Remove pan from the oven and add a little water to loosen the vegetables from the baking pan. Pour this mixture and the rest of the ingredients into a large soup pot and simmer for about 30 minutes. Serve.

Avocado & Broccoli Salad
Serves 4

2 ripe avocados
1 pound of fresh broccoli
4 Tablespoons extra virgin olive oil
2 Tablespoons lime juice
1 teaspoon of fresh oregano
1 Tablespoon of brown mustard

Wash the broccoli and cut it into small, bite-sized pieces. Peel and pit the avocados and cut them into small cubed pieces. Place the broccoli and avocado bits in a bowl. Meanwhile, whisk the olive oil, lime juice, fresh oregano and brown mustard together. Pour the oil mixture on the broccoli and avocado bits; toss well and serve.

Herb Baked Salmon with Creamed Style Spinach
Serves 4

4 6-ounce pieces of salmon
1 Tablespoon Trocomare
1 teaspoon tarragon (dry)
1 teaspoon coriander crushed seeds
juice of 2 lemons
2 Tablespoons of butter

Marinate fish in herbs, spices, and lemon juice for 1-2 hours. Sear in hot butter, 2 minutes on each side. Finish in oven 5 minutes at 385° F.

Creamed Style Spinach

3 cups spinach, rough chopped
1 cup herbed goat’s cheese sauce
½ cup yogurt
2 Tablespoons capers

Combine and heat just enough to wilt spinach. Pour over salmon.
