Issue 98: Berry Delicious

Berry Trio Dessert
Serves 10-15

2 cups fresh blueberries
2 cups fresh blackberries
2 cups fresh raspberries
5 Tablespoons stevia
3 cups steel-cut oats
2 cups whole grain flour
3 Tablespoons ground cinnamon
1 teaspoon ground nutmeg
1 cup of organic butter

Preheat oven to 350 degrees. In a large bowl, mix together the blueberries, blackberries, raspberries and 1 Tablespoon of the stevia. In a separate large bowl, combine the rest of the stevia, the steel-cut oats, whole grain flour, cinnamon and nutmeg—and then cut in the butter until the mixture is crumbly. Press half of the oats & flour mixture into the bottom of a buttered 9 x 13 inch pan. Pour the berry mixture on top and then sprinkle the remaining half of the oats & flour mixture over the berries. Bake at 350 degrees for 35-45 minutes or until the fruit bubbles and the topping is golden-brown. Serve warm—with or without organic ice cream.



Raspberry-Almond Salad
Serves 5

10 cups organic spring salad mix
1 medium avocado, sliced
1 small red onion, thinly sliced
2 cups fresh raspberries
1/3 cup sliced raw almonds
healthy salad dressing of your choice—i.e. raspberry walnut or extra virgin olive oil & apple cider vinegar mixture

In a large serving bowl, combine the spring salad mix, the sliced avocado, red onions slices, raspberries and almonds—with almonds going on last. Serve with your choice of healthy salad dressing.


Grilled Chicken Salad with Savory Strawberry Dressing
Serves 5

One pound of organic, boneless, skinless chicken breasts; grilled and sliced
10 cups of arugula
10 ounces of snow peas, stemmed
8 ounces of goat cheese
½ cup of sliced pecans
1 quart of fresh strawberries, sliced

Savory Strawberry Dressing Ingredients
1 cup of fresh strawberries
1 Tablespoon of apple cider vinegar
1 teaspoon ground black pepper
¼ teaspoon sea salt
1 teaspoon stevia
1 Tablespoon almond oil

Grill the chicken; let cool slightly and slice. Set aside. Combine arugula, snow peas, goat cheese, pecans and strawberries—adding the pecans and strawberries to top the salad. In a blender, blend together the ingredients for the dressing until at desired consistency. Pour dressing on salad and serve.
