Blueberry-Walnyt Quinoa

Blueberry-Walnut Quinoa
Serves 6 to 8

Ingredients:
1 cup of quinoa, rinsed
2 cups pure water
1 cup of fresh, organic blueberries
1 cup of whole, probiotic-rich organic Greek yogurt
2/3 cup of raw honey
¼ cup of raw walnuts
1 teaspoon of cinnamon
1 teaspoon of nutmeg

Directions:
In a medium saucepan, bring the water to a boil. Stir in the quinoa, cover, and reduce heat and simmer for about 10-15 minutes or until water is absorbed. Remove from heat and let cool; chill. Mix together the blueberries and Greek yogurt. Set aside. Mix together the raw honey, cinnamon and nutmeg. Set aside. Divide chilled quinoa into 6-8 servings. Place blueberry-yogurt mixture on each serving. Drizzle each serving with raw honey, cinnamon and nutmeg mixture. Top with raw walnuts. Serve.

Simple Lentils

Simple Lentils 
Serves 6 to 8

Ingredients:
2 cups lentils, preferably green lentils
filtered water
2 Tablespoons fermented whey or yogurt
1 teaspoon Celtic sea salt
2 cups beef or chicken stock
2 cloves garlic, peeled and mashed
several sprigs fresh thyme, tied together
1 teaspoon dried pepper corns, crushed
pinch dried chili flakes (optional)
juice of 1–2 lemons

Directions:
Soak lentils in filtered water, salt and whey for several hours. Drain, rinse and place in a pot and add stock to cover. Bring to a boil and skim. Add remaining ingredients, except lemon, and simmer, uncovered, for about 1 hour or until liquid has completely reduced. Add lemon juice and season to taste. Serve with a slotted spoon.

Enzyme Dessert

Creamy High Enzyme Dessert
Serves 1

Ingredients:
4 ounces goat’s milk, whole, organic plain yogurt or cultured cream
1 Tablespoon raw, unheated honey
1 teaspoon flaxseed oil
1⁄2 cup fresh or frozen organic berries

Directions:
Mix yogurt, honey and flaxseed oil and top with berries.
